3-4 large chicken breasts (shredded or cubed) or 1 rotisserie chicken
2-3 stalks of celery
1/2 - 1 cup mayonaisse (I like to use the reduced fat olive oil one because it is so much)
1/3 cup honey
1-2 tablespoons curry powder
Sliced green onions, for garnish
Slivered almonds, for garnish
sweetened coconut flakes, for garnish
salt, to taste
1. Mix Chicken and celery together in a large bowl
2. Mix mayonaisse, curry powder, honey and some salt in a seperate bowl. Adjust sweetnest/saltiness to taste.
3. Add sauce to chicken/celery mixture and spread in a baking dish.
4. Sprinkle almonds, green onions, coconut and salt on top of chicken mixture.
5. Bake at 350 degrees for 20-25 minutes, or until coconut begins to brown. Serve over rice.
