Crockpot Tater Tot Breakfast Casserole

I made two crockpot casseroles tonight. So yummy! And took about 10 minutes to prep.

I made two different flavor combinations using the same base recipe.

Cheesy Bacon Tater Tot Casserole
Layers- bacon & cheese
Toppings- cheese

Spinach Basil Bacon Breakfast Casserole
Layers- bacon and fresh spinach
Toppings- fresh basil

The final product was thick and fluffy and layered beautifully!

This recipe is very versatile and can be used with whatever are your favorite omelette ingredients. If you want really meaty than add more meat if you want real cheesy than use the whole bag!

Base Recipe Ingredients per crockpot:
1 - 2lbs. bag frozen tater tots (Trader Joe's is gluten free)
1/2-1 lbs meat of choice, cooked and chopped
12 eggs
1/2 cup milk (I used unsweetened almond milk)
1/2- 1 tbsp dried minced onion
a few grinds of Trader Joe's Everyday Seasoning Grinder

Optional layers:
1/2 package shredded cheese
2 big handfuls of fresh spinach
... Or whatever your heart desires!

Optional toppings:
Handful cheese
1-2 tbsp fresh chopped basil
.... Or whatever your heart desires!

Directions:
1. Spray crockpot.
2. Pour 1/2 bag of tater tots in crockpot.
3. Layer in your fillings-cooked meat, cheese, veggies, etc.
4. Sprinkle in dried minced onion
Pour other 1/2 of tater tot bag in crockpot
5. Layer on toppings - fresh basil, more cheese, etc.
6. Whisk 12 eggs, milk and seasoning
7. Pour eggs over crockpot
8. Turn crockpot on! High 3-4 hours, low 6-8 hours

I enjoyed mine with fresh avacado over top of it.

Servings: As the main dish this has 8-10 servings, as a side dish I would say 12--14 servings.

Beyeler Review: So good and easy! The boys all ate it! Kept as a leftover well. Can be used for breakfast or dinner!

Seasoning
2 handfuls fresh spinach - or more, chopped

Grape tomatoes halved

Add sausage, diced  (I used a Trader Joe's package of Apple Chicken Sausage which comes with 4 links they are fully cooked already) (could also use browned ground sausage or crumbled bacon)

Next, layer spinach, basil and tomatoes.

Then whisk 16 eggs, 1/2 cup almond milk, seasonings to taste (I recommend onion salt pepper garlic) (I used Trader Joe's Garlic Salt Grinder and Everyday Seasoning Grinders because I use them on everything). Pour mixture over everything.

I made half without veggies for kids.
Was thick and would make 12 side dish servings or 6 main dish servings.

Crockpot Curry Chicken

Soooo good! And gluten and dairy free!!!
Serves 4
INGREDIENTS
4 pieces chicken, boneless/skinless- breasts or thighs (I often use both)
2 cups coconut milk (not light)
1 tsp curry powder
1 tsp red Thai curry paste
1/2 tsp honey (I prefer raw)
1/8 tsp red pepper flakes
2 tbsp peanut butter (or almond or cashew butter, if preferred)
2 tbsp tamari (a gluten-free sub for soy sauce… coconut aminos work well, too)
1/2 large yellow onion
1/2 large red bell pepper
2 large basil leaves, preferably Thai (plus more for garnish)
1/4 cup cilantro (plus for more garnish)
1 cup snap or snow peas
*for garnish- lime, cilantro, basil, chives/scallions, and toasted cashews or peanuts
(to toast, heat over med/low heat in a pan for a few minutes until lightly browned and fragrant)
*Sriracha, for an extra kick! (see a homemade version HERE!)

Ok... So I used green Thai curry paste, plain honey, dried basil I had in my cabinet, the GF soy sauce I already had and I was very generous with my seasoning! So simple simple simple and plenty of room for your own taste! Also had GF spring rolls with sweet sauce and that tasted so yummy when it mixed in the rice a little :)

DIRECTIONS
Mix coconut milk, curry powder, curry paste, honey,
red pepper flakes, peanut butter, and tamari together in Crock Pot
Slice red pepper, onion, basil, and cilantro
Add them to the sauce
Stir until well mixed

Place chicken breasts/thighs into sauce…

They should be fully immersed so that liquid covers them
Cover and cook in high for 3 1/2 hours or on low for about 5 1/2
When done, stir it all together- the chicken will fall apart on the spot
Throw in peas just before serving
Serve over cooked rice
Top the chicken with all of the goodies you want, serve with lime, and enjoy!!

We topped with peanuts and sprinkled with lime juice :) xoxo

Tomato Basil Quiche With Bacon & Spinach

Numerous studies have explored the significant link between excessive sugar intake and an increased risk of depression, anxiety and other mental illnesses. Even a small reduction in sugar consumption can generate better overall health. Achieving a healthier mind and body can be as easy as cutting out sugar one meal per day.
Here is a savory, satisfying and sugar-free recipe from the “21-Day Sugar Detox” with very few steps for a simple meal that can be prepared for breakfast, lunch or dinner.
Ingredients:
  • 8 slices bacon
  • 8 eggs
  • 2 cloves garlic, minced or grated
  • 2 tablespoons chopped fresh chives
  • ¼ cup chopped fresh basil leaves
  • ½ teaspoon sea salt
  • 1-teaspoon black pepper
  • 2 cups chopped spinach
  • 1 to 2 tablespoons bacon fat (reserved from cooking bacon)
  • 12 cherry tomatoes, halved
Directions:
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Slice the bacon crosswise into ¼ inch strips.
  3. In a skillet over medium heat, cook the bacon until the fat is rendered and the meat is cooked, approximately 8 to 10 minutes.
  4. Remove the bacon from the pan and drain on paper towels; reserve the fat.
  5. In a large mixing bowl, whisk the eggs, garlic, chives, basil, salt and pepper until well combined.
  6. Stir in the spinach.
  7. Grease a 9 by 11 inch baking dish with the reserved bacon fat, then pour the egg mixture into the pan.
  8. Top with the bacon pieces and cherry tomato halves.
  9. Bake for 30 to 35 minutes or until the quiche puffs up and becomes golden brown on the edges.

1 cup milk (we use unsweetened vanilla almond milk)
1/2 cup oil (we use 1/4 cup applesauce and 1/4 cup grapeseed oil)

1 cup brown sugar (I use only 1/4 cup)
2 tsp baking powder
1 tsp salt
1/2 tsp cinnamon

Banana Pancakes & Oat Flour

Our favorite breakfast is banana pancakes. I have "cleaned up" the recipe and now it is a guilt-free and gluten-free pleasure.

Banana Pancakes
Ingredients:

  • 1 C. oat flour (recipe below)
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon ** Beyeler update we like these with 1 tbsp.
  • 1 large banana, very ripe, mashed
  • 1 C. milk (any kind of milk works, we use unsweetened vanilla almondmilk)
  • 1 egg
  • 2 tsp. oil (I always use coconut oil or grapeseed)
  • 1 tsp. vanilla
  • 1/4 cup ground flaxseed (I throw in if I have it)
  • coconut oil for cooking
Directions:
Beyeler Reviews:
Recipe adapted from SkinnyTaste.

Mix milk, egg, oil, vanilla and mashed bananas in a bowl. Then add dry ingredients. Don't over-mix. Heat Skillet on medium heat, coat with coconut oil. Pour 1/4 C. of batter on heated skillet. When pancakes bubble flip! Makes 12 pancakes.

Everyone in our house LOVES these. They freeze well and keep in the refrigerator all week. I just pop them in the toaster and serve. These are good enough to eat without syrup.

Oat Flour

Ingredients:
  • Oats
Directions:
Put oats in food processor, blend. Now you have oat flour!

Beyeler Reviews:
I love baking with it! I do usually combine with white whole wheat flour in recipes because without things are usually flat. Oat Flour whips up in the Ninja in less than a minute.

My Homemade Oat Flour. I always buy King Authur Brand Flour.
